Kanetsugu Sharpening Revolution 21 series knives are made from 1K6 stainless steel by Daido Steel company. The knives from this series have a serrated blade. Blades of this type stay sharp for up to five times longer than the blades of usual knives. Because of a different cutting principle, these knives easily cut through products that have a thick outer layer, but are soft inside.

Handle materials
21 series knife handles are made from soft zeras, which is Mitsubishi Chemical’s homo-poly plane resin. This material is commonly used in medical applications due to its excellent heat resistance and shock-absorbing properties. You have the option to choose from five different colors: red, black, yellow, blue, and green, allowing you to match the handle to your choice of food.
